Scott's Savoury Tomato Soup - A Burst of Flavour and Comfort
A Symphony of Flavour - Scott's Savoury Tomato Soup
Hey there, fellow food enthusiasts! Scott here, ready to share another culinary adventure with you. Today, I'm diving into the world of homemade tomato soup, and let me tell you, it's a journey worth taking.
Now, tomato soup might seem like a simple dish, but believe me, there's a world of flavour waiting to be unlocked. So, grab your aprons and let's get cooking!
I started by gathering the freshest ingredients: ripe tomatoes, onions, garlic, carrots, and celery. These vibrant veggies are the building blocks of flavour, creating a symphony of taste in every spoonful.
First, I sautéed the onions and minced garlic in a glug of olive oil, filling the kitchen with their delightful aroma. Next, I added the diced carrots and celery, allowing them to soften and release their natural sweetness.
But here's where the magic happens - the star of the show, the ripe tomatoes. I added these juicy gems, along with tomato paste, dried basil, oregano, thyme, and a hint of red pepper flakes for a subtle kick. The combination of herbs and spices created a harmonious blend of flavours, turning ordinary tomatoes into a symphony of taste.
With the veggies and seasonings mingling in the pot, I poured in the vegetable broth, allowing everything to simmer and meld together. As the soup cooked, the kitchen filled with an irresistible aroma, teasing my taste buds and fueling my excitement.
Once the flavours had developed and the tomatoes had softened, I let the soup cool slightly before transforming it into a velvety masterpiece. Using my trusty immersion blender, I carefully pureed the mixture until it reached a smooth and creamy consistency.
Back on the stove, the soup simmered gently, allowing the flavours to further intertwine. With each passing minute, the anticipation grew, and my hunger intensified. Finally, it was time to serve. I ladled the hot soup into bowls, garnishing each one with fresh basil leaves, their vibrant green colour enhancing the visual appeal.
As I took my first spoonful, the rich flavours danced on my palate. The tanginess of the tomatoes, the sweetness of the carrots, and the aromatic herbs created a symphony of taste that warmed my soul. It was a moment of pure comfort, a taste of pure bliss.
So, my friends, if you're seeking a burst of flavour and a comforting bowl of goodness, look no further than Scott's Savoury Tomato Soup. With just a handful of ingredients and a sprinkle of kitchen magic, you can create a culinary masterpiece that will warm your heart and nourish your body.

Scott's Savory Tomato Soup
Ingredients:
1.5 kg ripe tomatoes, quartered
1 onion, finely chopped
2 cloves of garlic, minced
2 carrots, diced
2 celery stalks, diced
4 cups vegetable broth
2 tablespoons tomato paste
1 teaspoon dried basil1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
2 tablespoons olive oil
Fresh basil leaves (for garnish)
Instructions:
Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant.
Add the diced carrots and celery to the pot, and cook for another 5 minutes until they start to soften.
Add the quartered tomatoes to the pot, along with the tomato paste, dried basil, dried oregano, dried thyme, red pepper flakes (if using), salt, and pepper. Stir well to coat the vegetables with the seasonings.
Pour in the vegetable broth, making sure the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the tomatoes have softened and the flavours have melded together.
Remove the pot from the heat and let the soup cool slightly.
Using an immersion blender or a countertop blender, puree the soup until smooth and creamy. If using a countertop blender, work in batches and blend on low speed to avoid hot liquid splashing.
Return the pureed soup to the pot and place it back on the stove over low heat. Adjust the seasoning to taste.
Heat the soup until warmed through, stirring occasionally.Serve the tomato soup hot, garnished with fresh basil leaves.
Scott's Tips:
For a creamier texture, you can add a splash of heavy cream or coconut milk before serving.
Don't be afraid to experiment with additional seasonings like smoked paprika or a hint of balsamic vinegar for added depth of flavour.
This soup pairs well with crusty bread or a grilled cheese sandwich for a comforting and satisfying meal.
